So, nothing beets a good salad, especially ones made from the root most similar to the heart.
This one´s so simple, you´ll probably never need to read this post again.
For a 1 person salad you´ll need:
- 1 Fist size beetroot
- About a thumb of cumin
- A pinch of salt
- A shot of 5% vinegar - normal or apple cider vinegar will do the trick
- A small pot for boiling
Start by cutting the beetroot in to 0.6 cm/quarter inch slices. Proceed to slice the slices into bite size pieces (eg. 1/4)
Place the sliced beetroot into a pot and almost cover with water, add the cumin and cover the pot.
Bring the water to a boil for 2 minutes and turn the heat off
Add the vinegar and leave to cool
When cool, taste and add salt to flavour
Enjoy immediately or leave in refrigerator to marinate further (good for at least a week if covered and refrigerated).
